Vegan Taco Bowl
A colorful and nutritious taco bowl with seasoned tofu, fresh vegetables, and a creamy yogurt-based dressing.

I have doubled the apple cider vinegar, added 1 teaspoon Maple syrup, bake tofu at 400 but watch closely. I serve this on a bed of chopped Romaine lettuce. I offer additions of sliced avocado, chopped onions, chopped cilantro, salsa, guac and tortilla chips.

Ingredients
- 1½ cups Mexican Rice
- 1 avocado, stoned, peeled and diced
- 1 cup cilantro finely chopped
- 2 tomatoes, diced
- 1 red onion diced
- 1 cup black beans drained and rinsed
- 1 pack firm tofu grated
- 1 packet taco seasoning
Instructions
- 1Toss tofu with seasoning.
- 2Spread it on a lined baking sheet and bake at 375 for 15 minutes.
- 3Prep the rest of the ingredients and add them to a bowl.
- 4Whisk all of the dressing ingredients together in a bowl.
- 5Once the grated tofu is ready, add it to the ingredient bowl, pour in the dressing and serve immediately.

- 1 cup unsweetened vegan yogurt
- ¾ teaspoon paprika
- ¾ teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon apple cider vinegar
- ½ teaspoon ground cumin
