    Vegan Cabbage Soup

    I have added ¼ lb. of mushrooms, 1 tablespoon of allspice, 1 extra onion, 1 extra can of tomatoes and 2 handfuls of baby kale. It is deelish either way. - Suz

    Let's cook

    Ingredients

    • 4 cloves garlic
    • 4 yukon gold potatoes
    • 2 carrots, diced
    • 2 stalks celery, diced
    • 1 yellow onion, diced
    • 1 tsp. ginger
    • 1½ tsp. garlic powder
    • 8 cups vegetable broth
    • 1½ cups diced canned tomatoes
    • ½ cup green cabbage finely chopped
    • 500 grams extra firm tofu pressed and chopped

    Instructions

    1. 1Add garlic and onion to a pot over medium heat and cook until translucent, approximately 3 minutes.
    2. 2Add the potatoes, carrots, celery and spices to the pot, stir and cook for an additional 5 minutes, until soft.
    3. 3Add the vegetable broth, diced tomatoes and cabbage to the pot. Bring to a boil, then simmer for 25 minutes until everything is cooked through.
    4. 4Add the tofu in the end, if using.
