Vegan Banana Bread
A wholesome banana bread made with oat flour and flax seeds - perfectly moist and naturally sweetened.

Ingredients
- 2 tbsp flax seed powder
- 6 tbsp water
- 2 cups organic rolled oats (ground into flour)
- 3 bananas (preferably overripe)
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- ¼ cup dates (finely chopped)
- 1-2 tbsp sesame seeds (optional)
Instructions
- 1Preheat oven to 375°F.
- 2Mix flax seed powder with water and let sit for 5 minutes to thicken.
- 3Mash bananas well in a separate bowl.
- 4Combine the flax mixture with the mashed bananas.
- 5In a large mixing bowl, combine all dry ingredients (oat flour, baking powder, baking soda, cinnamon, and chopped dates).
- 6Blend the flax/banana mixture into the flour mixture until well combined.
- 7Pour the mixture into a silicone bread pan or parchment-lined bread pan.
- 8Sprinkle sesame seeds on top if using.
- 9Bake for 35-40 minutes or until a toothpick inserted in center comes out clean.
- 10Let cool before slicing.
