Dr. Esselstyn's favorite superfood salad with kale, Napa cabbage, and Jane's 3-2-1 dressing.

Salad
Ingredients
- 1½ bunches of kale, leaves stripped of spines, chopped in fine strips (almost like ribbons)
- ½ head of Napa cabbage, finely shredded or chopped
- ¼ red onion, thinly sliced
- ½ cup grape tomatoes, halved
- 3-4 carrots, peeled and grated
- 1 cup raw edamame, shelled
- 1 cup blueberries
- ½ cup red pepper chopped
Instructions
- 1Combine all ingredients and toss with your favorite dressing.
- 2Or try Jane Esselstyn's family favorite 3-2-1 dressing.
Dressing
Ingredients
- 3 tablespoons of balsamic vinegar
- 2 tablespoons mustard of choice
- 1 tablespoon maple syrup
Instructions
- 1Mix all ingredients in a small bowl and whisk until smooth.
