    I use 8 cups broth, 4 tablespoons nutritional yeast, and add a tablespoon of allspice and spinach and arugula at the end. - Suz

    Let's cook

    Ingredients

    • 1 onion, chopped
    • 6 cups veg broth (I use 8 cups)
    • 2 carrots, sliced
    • 2 cups red potatoes, cubed
    • 2 tablespoons Nutritional Yeast (I use 4 tablespoons)
    • 2 teaspoons soy sauce (optional)
    • ½ teaspoon marjoram
    • ½ teaspoon sage
    • ¼ teaspoon thyme
    • Several twists of fresh ground pepper
    • 2 cups broccoli florets
    • 2 cups cauliflower

    Instructions

    1. 1Place the onion and ¼ cup of the broth in a large pot.
    2. 2Cook, stirring frequently, until the onion softens, about 2-3 minutes.
    3. 3Add remaining broth and the carrots and potatoes, nutritional yeast, soy sauce and seasonings.
    4. 4Bring to a boil, reduce heat, cover and cook for 20 minutes.
    5. 5Add broccoli and cauliflower and continue to cook another 20 minutes.
