    Five Ingredient Veggie Burger

    Ingredients

    • 2 cups no salt added black beans, drained and liquid reserved
    • 1 medium onion-quartered
    • ½ cup quick cooking rolled oats
    • 1 tablespoon lime juice
    • 2 teaspoons chile powder
    • Salt and pepper
    • 4 100% whole wheat hamburger buns, split and toasted
    • Romaine lettuce
    • 1 large tomato sliced
    • 4 red onion slices
    • Condiments of your choosing

    Instructions

    1. 1In a food processor combine the first 5 ingredients through chili powder. Pulse until chunky but NOT pureed.
    2. 2Add a small amount of reserved bean liquid, if the mixture seems dry or is not sticking together. The mixture should be moist but NOT wet. Season with S&P.
    3. 3With wet hands, shape mixture into four 3½ inch patties. Chill at least 20 minutes.
    4. 4In a large nonstick skillet cook burgers over medium-high heat for 8-10 minutes or until burgers are lightly browned and cooked through, turning only once.
    5. 5Serve burgers on hamburger buns of your choice.
    6. 6Add lettuce, tomato, and onion slices and condiments if using.
