    • 4 very ripe bananas
    • 3½ cups old fashioned oats
    • 1 tablespoon cinnamon
    • ½ teaspoon vanilla powder or extract
    • Raisins (optional)

    Instructions

    1. 1Preheat oven to 350°F.
    2. 2Mash the bananas until smooth.
    3. 3Stir in the oats, cinnamon, and vanilla (add raisins if desired).
    4. 4Use a retractable cookie scoop to portion the batter onto a silicone baking mat on a cookie sheet.
    5. 5Bake for 30 minutes or until tops are not sticky.
    6. 6Gently flip cookies over and bake an additional 10 minutes.
    7. 7Let cool completely before serving.
